  • 2 apples, cored and cut into 1-inch wedges
  • 1 fennel bulb, trimmed and sliced into 1/2-inch wedges
  • 2 tbsp fresh parsleies, chopped
  • 1 tbsp olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 4 boneless pork loin chops, about 3/4 inch thick
  • 0.33 cup all-purpose flour
  • 1 large egg, whisked
  • 1 cup panko breadcrumb
  • 0.5 cup parmesan cheese, finely grated
  • 2 tbsp olive oils
  • 0.5 cup low-sodium chicken stock
  • 1 tbsp dijon mustard
  • 1 tbsp fresh lemon juice
  • 1 tbsp unsalted butter
  • 0.25 tsp kosher salt (optional)
  • 2 tbsp fresh parsleies, reserved from preparation

Instructions

  1. 01

    Prepare the oven and vegetables

Place a rack in the center of the oven and preheat it to 425°F (220°C). Line a large rimmed sheet pan with parchment and set a large oven-safe skillet near the stove. Rinse and thoroughly dry 12 oz green beans, then trim the stem ends. Rinse and dry 2 medium apples, remove their cores, and cut them into 1-inch wedges. Rinse and dry 1 small fennel bulb, trim away the stalks and tough base, and slice the bulb into 1/2-inch wedges. Chop 2 tbsp fresh parsley and reserve it for serving. | Why: A hot oven and dry produce promote browning instead of steaming, while uniform pieces cook at the same rate.

  2. 02

    Roast the apple and vegetables

Arrange the prepared green beans, apples, and fennel on the lined pan. Drizzle with 1 tbsp olive oil, then sprinkle with 1/2 tsp kosher salt and 1/4 tsp black pepper. Toss until lightly coated and spread everything into one layer. Roast for 18–22 minutes, turning the vegetables and fruit once halfway through, until the beans are tender-crisp, the fennel is browned at the edges, and the apples are tender but still hold their shape. Remove the pan and keep it warm. | Why: Roasting concentrates natural sweetness and adds caramelized edges that balance the savory crust.

  3. 03

    Build the crispy coating

While the vegetables roast, pat 4 boneless pork loin chops dry with paper towels. If any chop is thicker than 1 inch, gently pound it between sheets of plastic wrap until about 3/4 inch thick. Season both sides with 1/2 tsp kosher salt and 1/4 tsp black pepper. Set out three shallow dishes: place 1/3 cup all-purpose flour in the first, whisk 1 large egg in the second, and combine 1 cup panko breadcrumbs with 1/2 cup grated Parmesan cheese in the third. Coat each chop in flour, shaking off excess; dip in the egg; then press firmly into the crumb mixture until fully covered. Place the coated chops on a plate and let them stand for 5 minutes so the coating adheres. | Why: Drying the meat and pressing the crumbs firmly onto it creates an even crust, while the brief rest prevents loose crumbs from falling away.

  4. 04

    Sear and finish the pork

Heat the oven-safe skillet over medium-high heat for 2 minutes. Add 2 tbsp olive oil and heat until it shimmers. Carefully place in the coated chops, leaving space between them, and cook for 2–3 minutes per side until the crust is deeply golden. Transfer the skillet to the 425°F oven and bake for 6–10 minutes, depending on thickness, until the centers reach 145°F (63°C) on an instant-read thermometer. Move the chops to a clean plate, tent loosely with foil, and rest for 5 minutes. Do not reuse the uncooked-meat plate. | Why: Searing develops the crisp crust, and gentle oven finishing cooks the center evenly while the rest keeps the meat juicy.

  5. 05

    Make the lemon-Dijon pan sauce

Pour off excess fat from the skillet, leaving the browned bits. Return it to medium heat and add 1/2 cup low-sodium chicken stock, scraping the bottom with a wooden spoon. Simmer for 2–3 minutes until reduced by about one-third. Whisk in 1 tbsp Dijon mustard and 1 tbsp fresh lemon juice, then simmer for 1 minute. Turn off the heat and swirl in 1 tbsp unsalted butter until glossy. Taste and adjust with 1/4 tsp kosher salt only if needed. | Why: Deglazing lifts flavorful browned bits, while mustard, lemon, and butter make a balanced sauce without needing cream.

  6. 06

    Rest, garnish, and serve

Divide the roasted vegetables and fruit among 4 warmed plates. Set one rested chop on each plate, spoon the hot pan sauce over and around the meat, and scatter the reserved 2 tbsp fresh parsley over the top. Serve immediately while the crust is crisp and the sauce is warm. | Why: Plating the crisp meat separately from the sauce preserves its texture, while the fresh herb adds color and a clean finish.
