  • 15 g honeies

  • 0.5 g black pepper, finely ground
  • 30 ml extra-virgin olive oils
  • 15 ml apple cider vinegar
  • 90 g all-purpose flour
  • 2 large eggs, beaten
  • 120 g panko breadcrumbs
  • 4 g sweet paprikas
  • 2 g garlic powders
  • 3 g fine salt
  • 1 g black pepper, finely ground
  • 600 g boneless, skinless chicken breasts, halved horizontally and pounded to 1 cm thickness

  • 45 ml neutral cooking oils

    Prepare the slaw vegetables and sauce

    Set a large cutting board, chef’s knife, box grater, two medium bowls, a shallow plate, a large skillet, tongs, and a wire rack over a rimmed baking sheet on the counter. Wash and thoroughly dry 300 g green cabbage, 1 apple, 15 g fresh parsley, and 1 lemon. Remove the cabbage core and slice the leaves very thinly. Halve and core the apple, then cut it into thin matchsticks. Finely chop the parsley and zest the lemon; reserve the zested lemon for the dressing in the next step. In one bowl, whisk together 120 g plain Greek yogurt, 30 g Dijon mustard, 15 g honey, 1 g fine salt, and 0.5 g black pepper until smooth. Cover the bowl and refrigerate it while you cook. | Why: Thin vegetables soften slightly while keeping their crunch, and chilling the sauce makes its tangy flavor more defined.

    Make the lemon dressing and breading station

    Squeeze the reserved lemon over the sliced vegetables, catching and discarding any seeds.     Flatten and bread the chicken

    Place 600 g boneless, skinless chicken breasts between two sheets of baking paper. Using the flat side of a meat mallet or a small heavy skillet, pound each piece to an even 1 cm thickness, working from the center outward. Pat the pieces dry, then season both sides with 2 g fine salt and 1 g black pepper. Coat each piece lightly in the flour, shake off excess, dip into the beaten eggs, and press firmly into the seasoned panko mixture so no bare patches remain. Set the breaded pieces on the wire rack and let them stand for 5 minutes; do not stack them. | Why: Even thickness prevents dry edges, and a short rest helps the coating adhere instead of slipping in the pan.

    Pan-fry until crisp and safely cooked

    Heat the large skillet over medium-high heat for 2 minutes. Add 45 ml neutral cooking oil; it should shimmer immediately but not smoke. Carefully lay in the breaded pieces without crowding; work in two batches if needed. Fry for 3–4 minutes per side, adjusting the heat to keep the crumbs deep golden rather than dark brown. Transfer cooked pieces to the wire rack and check the thickest part with an instant-read thermometer: it must reach 74°C. If necessary, return a piece to the skillet for 30–60 seconds per side. | Why: Moderate high heat browns the crust quickly while the temperature check confirms the poultry is safe and juicy.

    Rest, finish, and serve

    Let the crisp pieces rest on the rack for 3 minutes so their juices settle. Toss the dressed vegetables with the chopped parsley.
