Ingredients

  • 150 g basmati rice, rinsed
  • 360 ml waters
  • 0.5 tsp salt
  • 1 onion, peeled and diced
  • 1 carrot, peeled and diced
  • 1 bell pepper, seeded and diced
  • 10 g fresh cilantros, chopped
  • 1 lime, cut into wedges
  • 2 garlic cloves, peeled and minced
  • 15 g fresh gingers, peeled and finely grated
  • 1 tbsp vegetable oil
  • 1 tsp curry powder
  • 0.5 tsp ground cumin
  • 0.25 tsp ground turmeric
  • 400 g cooked chickpeas, drained and rinsed
  • 400 g canned diced tomatoes
  • 200 ml unsweetened coconut milk, shaken or stirred smooth
  • 100 g baby spinaches, washed and dried

    Rinse and cook the rice

    Set out a medium saucepan with a lid, a fine-mesh sieve, a cutting board, and a chef’s knife. Rinse 150 g basmati rice, rinsed in the sieve under cold running water for about 30 seconds, stirring with your fingers, until the runoff is mostly clear. Add the rice, 360 ml water, and 0.5 tsp salt to the saucepan. Bring to a boil over high heat, then cover, reduce to low, and cook for 15 minutes, until the water is absorbed and the grains are tender. Remove from the heat and leave covered for 5 minutes; fluff with a fork. Why: Rinsing removes excess surface starch for less sticky rice, while the covered rest finishes steaming the grains evenly.

    Wash and prepare the vegetables and aromatics

    Wash and dry 1 onion onion, peeled and diced, 1 item carrot, peeled and diced, 1 pepper bell pepper, seeded and diced, 10 g fresh cilantro, chopped, and 1 item lime, cut into wedges. Peel the onion, carrot, garlic, and ginger. Dice the onion, carrot, and bell pepper into roughly 1 cm pieces; mince 2 cloves garlic cloves, peeled and minced and finely grate 15 g fresh ginger, peeled and finely grated. Chop the cilantro and cut the lime into wedges. Keep the vegetables, aromatics, cilantro, and lime separate and ready beside the stove. Why: Uniform pieces cook at the same rate, and preparing everything before sautéing prevents the aromatics or spices from scorching while you chop.

    Build the spiced vegetable base

    Place a large sauté pan or wide saucepan over medium heat. Add 1 tbsp vegetable oil and heat for 30 seconds until it shimmers. Add the diced onion, carrot, and bell pepper, then cook for 5 minutes, stirring occasionally, until the onion is translucent and the carrot begins to soften. Add the minced garlic and grated ginger and cook for 1 minute, stirring constantly, until fragrant. Stir in 1 tsp curry powder, 0.5 tsp ground cumin, and 0.25 tsp ground turmeric and toast for 30 seconds; the spices should smell aromatic but not dark or burnt. Why: Sautéing the vegetables develops sweetness, while briefly blooming the spices in oil releases their flavor without overcooking them.

    Simmer the curry

    Add 400 g cooked chickpeas, drained and rinsed, 400 g canned diced tomato, and 200 ml unsweetened coconut milk, shaken or stirred smooth to the spiced vegetables. Stir well, scrape up any browned bits, and bring the mixture to a gentle bubble over medium-high heat. Reduce the heat to medium-low and simmer uncovered for 10 minutes, stirring occasionally, until the sauce thickens enough to lightly coat a spoon and the carrots are fork-tender. Stir in 100 g baby spinach, washed and dried and cook for 2 minutes, just until wilted and bright green. Taste and adjust the seasoning with the salt already added to the rice only if needed; do not add more salt unless the curry tastes flat. Why: The simmer melds the tomato, coconut, and spices, while adding spinach at the end preserves its color and fresh flavor.

    Finish, rest, and serve

    Turn off the heat and let the curry rest uncovered for 2 minutes. Squeeze the juice from 1 lime over the curry and stir gently. Divide the fluffy rice between two warm bowls, spoon the curry over or alongside it, and scatter over the chopped cilantro. Serve immediately with the remaining lime wedges. Why: Resting lets the sauce settle, while lime and cilantro brighten the rich curry just before serving.
