Ingredients

  • 15 oz chickpeas, rinsed, drained, and dried thoroughly
  • 2 zucchinis, trimmed and cut into 1/2-inch half-moons
  • 1 red bell pepper, seeded and cut into 1-inch pieces
  • 1 red onion, peeled and cut into 1-inch wedges
  • 2 tbsp olive oils
  • 0.75 tsp kosher salt
  • 0.5 tsp black pepper, freshly ground
  • 1 tsp smoked paprika
  • 1.5 cup vegetable broths
  • 1.5 cup couscous
  • 0.25 tsp kosher salt
  • 1 lemon, zested, then juiced
  • 4 oz feta cheeses, crumbled
  • 0.25 cup fresh parsley, washed, dried, and finely chopped

    Prepare the tray and season the vegetables

    Position one oven rack in the center and heat the oven to 425°F (220°C). Line a large rimmed baking sheet completely with parchment paper, including the base where the food will sit; this is the prepared roasting tray. Rinse, drain, and dry 15 oz chickpeas very thoroughly with clean towels. Wash and dry 2 zucchini, then trim and cut them into ½-inch half-moons. Wash and dry 1 red bell pepper, remove its stem and seeds, and cut it into 1-inch pieces. Peel 1 red onion and cut it into 1-inch wedges. In a large bowl, combine the chickpeas, zucchini, bell pepper, and onion with 2 tbsp olive oil, 3/4 tsp kosher salt, 1/2 tsp black pepper, and 1 tsp smoked paprika. Toss until glossy and evenly coated, then spread everything on the parchment-lined tray in one uncrowded layer. | Why: Lining the tray prevents sticking and makes the chickpeas crisp while the vegetables brown cleanly.

    Roast until caramelized

    Place the lined tray on the center rack and roast for 20 minutes. Remove it carefully, stir and turn the chickpeas and vegetables with a spatula, then return the tray to the oven for 5 to 8 minutes. Roast until the chickpeas are crisp at the edges, the zucchini is tender with browned spots, and the onion edges are deeply golden. Keep the oven on only until roasting is complete, then turn it off. | Why: Turning midway exposes new surfaces to the hot tray, building even caramelization rather than steaming.

    Steam the lemon couscous

    While the tray roasts, bring 1 1/2 cups vegetable broth to a full boil in a medium saucepan over high heat. Stir in 1 1/2 cups couscous, 1/4 tsp kosher salt, and 1 lemon zest. Cover, remove the saucepan from the heat, and let stand for 5 minutes. Uncover and fluff with a fork; the grains should be separate and tender. Cut the zested lemon in half, squeeze in its juice, and fluff again. | Why: Resting off the heat lets the couscous absorb liquid gently, keeping it light rather than gummy.

    Fold, finish, and serve

    Let the roasted chickpeas and vegetables cool on the tray for 2 minutes so their surface heat does not compress the couscous. Fold them gently into the couscous. Crumble 4 oz feta cheese over the top, then wash, dry, and finely chop 1/4 cup fresh parsley and scatter it over the finished dish. Taste and adjust with a small pinch of salt or pepper only if needed.
