Brown-Butter Strawberry Oat Crumble Bars

Buttery oat shortbread, a bright lemony strawberry center, and a crisp golden crumble make these easy-to-share bars feel like a fruit crumble you can eat by hand. Browned butter adds a toasty depth without making the recipe fussy; cool the pan completely for neat slices.

Ingredients

  • 2 cup strawberries, rinsed, dried, hulled, and chopped
  • 1.5 cup all-purpose flour
  • 1 cup old-fashioned rolled oat
  • 0.75 cup light brown sugar, packed
  • 0.5 tsp fine salt
  • 0.75 cup unsalted butter, melted and cooled for 5 minutes
  • 0.33 cup granulated sugar
  • 2 tbsp cornstarches
  • 1 tbsp lemon juice, freshly squeezed
  • 1 tsp vanilla extract

Instructions

  1. 01

    Prepare the pan and berries

Heat the oven to 350°F (175°C) with a rack in the center. Line an 8-inch (20-cm) square baking pan with parchment, leaving overhang on two sides so the bars can be lifted out later. Rinse 2 cups strawberries under cool running water, pat them thoroughly dry, remove the green tops, and cut them into roughly 1/2-inch pieces. Set the prepared fruit aside. | Why: A lined pan releases the bars cleanly, and dry fruit keeps the filling from turning watery.

  2. 02

Mix and bake the oat base

In a large bowl, whisk together 1 1/2 cups all-purpose flour, 1 cup old-fashioned rolled oats, 3/4 cup light brown sugar, and 1/2 teaspoon fine salt until evenly combined. Pour in 3/4 cup unsalted butter, melted and cooled for 5 minutes, and stir until no dry patches remain and the mixture forms moist, clumpy crumbs. Press about two-thirds of the mixture firmly and evenly into the lined pan. Spread the remaining crumbs on a plate and set them aside for the topping. Bake the base for 12 minutes; it should look set and just beginning to turn pale gold at the edges. Keep the oven on. | Why: A brief first bake firms the bottom so the juicy filling won't soak through.

  3. 03

Add the strawberry filling and finish baking

While the base bakes, gently toss the prepared fruit in a medium bowl with 1/3 cup granulated sugar, 2 tablespoons cornstarch, 1 tablespoon lemon juice, and 1 teaspoon vanilla extract until the pieces are evenly coated. When the base comes out, spread the filling over it in an even layer, then scatter the reserved oat crumbs across the top. Bake at 350°F (175°C) for 32 minutes, until the topping is golden and the fruit filling bubbles visibly at the edges. Set the pan on a heat-safe surface. | Why: The starch thickens the berry juices as they bubble, while the crumb topping turns crisp and fragrant.

  4. 04

    Cool, slice, and serve

Let the pan cool on a rack for at least 2 hours, until the center is fully set and no longer warm. Use the parchment overhang to lift the slab onto a cutting board. With a sharp knife, cut it into 16 bars, wiping the blade between cuts for clean edges. Serve at room temperature. Refrigerate leftovers in a covered container for up to 4 days. | Why: Full cooling lets the fruit layer set, so the bars hold together instead of running when sliced.
