Ingredients

  • 2 tbsp olive oils
  • 0.5 cup panko breadcrumb
  • 0.33 cup parmesan cheese, finely grated
  • 1.5 lb boneless, skinless chicken thighs, patted dry
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 1 yellow onion, small
  • 3 garlic cloves
  • 1.5 cup long-grain white rice, rinsed and drained
  • 1 tsp dried thyme
  • 3 cup low-sodium chicken broth
  • 1 artichoke heart, 14 oz can, drained and roughly chopped
  • 1 lemon, zested and halved
  • 0.33 cup heavy cream
  • 3 oz baby spinaches, rinsed and dried
  • 2 tbsp fresh parsleies, chopped

Instructions

  1. 01

Get the oven and crunchy topping ready

Heat the oven to 375°F (190°C). Set out a large oven-safe skillet with a lid (or foil), a cutting board, knife, measuring cups, and a fine grater. Drain the artichokes in a sieve, rinse and dry the spinach, and pat the chicken dry; set these aside for their later steps. Measure 2 tbsp olive oil, 1/2 cup panko breadcrumbs, and 1/3 cup finely grated Parmesan cheese. Warm 1 tbsp of the oil in the skillet over medium heat, add the panko, and stir for 2–3 minutes until evenly golden and crisp. Scrape the crumbs into a bowl and stir in the Parmesan; set aside. Keep the skillet handy. | Why: Toasting the topping separately keeps it crisp instead of letting it steam over the rice.

  2. 02

    Season and brown the chicken

Measure 1 1/2 lb boneless, skinless chicken thighs, 1 tsp kosher salt, and 1/2 tsp black pepper. Season the chicken all over with the salt and pepper. Heat the remaining 1 tbsp oil in the skillet over medium-high heat. Add the thighs in one layer and sear for 3–4 minutes per side, until well browned but not cooked through. Transfer to a clean plate; leave the browned bits and oil in the skillet. | Why: Browning builds savory flavor in the pan and gives the finished chicken a golden surface.

  3. 03

    Build the fragrant rice base

Measure 1 small yellow onion, 3 garlic cloves, 1 1/2 cups long-grain white rice, and 1 tsp dried thyme. Peel and finely dice the onion, then peel and mince the garlic. Return the skillet to medium heat. Add the onion and cook for 3–4 minutes, stirring, until softened and translucent. Stir in the garlic and thyme for 30 seconds, just until fragrant. Add the rice and stir for 1 minute so the grains are coated with the pan flavors. | Why: Softening the aromatics first gives the rice a flavorful foundation, while briefly toasting the grains helps them cook evenly.

  4. 04

Add the broth and artichokes, then bake

Measure 3 cups low-sodium chicken broth, 1 can (14 oz) artichoke hearts, and 1 lemon. Drain and roughly chop the artichokes if you have not already; zest the lemon and reserve it, then cut the lemon in half for juicing later. Stir the broth and artichokes into the skillet, scraping up browned bits. Bring the mixture just to a simmer, about 2 minutes. Nestle the browned chicken thighs on top, cover tightly with the lid or foil, and carefully transfer the skillet to the 375°F oven. Bake for 22–25 minutes, until the rice is tender and has absorbed most of the broth and the thickest chicken piece reaches 165°F (74°C) on an instant-read thermometer. If rice still feels firm, cover and bake 3–5 minutes more. | Why: A covered bake cooks the rice gently while the chicken finishes safely and stays juicy.

  5. 05

    Finish creamy, bright, and crisp

Measure 1/3 cup heavy cream, 3 oz baby spinach, and 2 tbsp chopped fresh parsley. Remove the skillet from the oven with oven mitts, uncover it away from your face, and let it stand for 5 minutes. Transfer the chicken briefly to a clean plate. Stir the cream, spinach, reserved lemon zest, and juice from the lemon into the rice; stir until the spinach wilts and the rice looks glossy, about 1–2 minutes. Taste and adjust salt or pepper only if needed. Return the chicken to the skillet, scatter the toasted breadcrumb-Parmesan mixture over the top, and finish with parsley. Serve warm straight from the skillet. | Why: A short rest lets the rice settle; adding spinach and lemon at the end preserves their fresh color and tang.
