Ingredients

  • 900 g carrots, peeled and cut into sticks
  • 425 g canned brown lentils, drained, rinsed, and patted dry
  • 3 tbsp olive oils
  • 1 tsp fine salt
  • 0.5 tsp black pepper, ground
  • 1 tsp smoked paprika
  • 1 tbsp maple syrup
  • 1 tbsp lemon juice
  • 0.5 tsp chipotle powder
  • 2 tbsp fresh parsleies, finely chopped
  • 1 garlic, minced
  • 0.75 cup plain greek yogurt

Instructions

  1. 01

Prep and roast the carrots and lentils

Heat the oven to 425°F (220°C). Line a large rimmed sheet pan with parchment and set it aside. Rinse and dry 900 g carrots, peel them, and cut lengthwise into even 1-inch-thick sticks; halve any very thick pieces so they roast at the same pace. Drain, rinse, and thoroughly pat dry 425 g canned brown lentils. Toss the carrots and lentils on the pan with 3 tbsp olive oil, 1 tsp fine salt, ½ tsp black pepper, and 1 tsp smoked paprika; divide the salt between this step and the yogurt sauce, using about ¾ tsp here. Spread everything in a single layer, with the cut sides of the carrots facing down where possible. Roast for 25–30 minutes, turning the carrots and stirring the lentils after 15 minutes, until the carrots are browned at the edges and easily pierced with a knife and the lentils look dry with crisp spots. | Why: Dry lentils and a roomy pan help the lentils crisp instead of steam.

  2. 02

    Brush on the smoky-sweet glaze

While the pan roasts, stir 1 tbsp maple syrup, 1 tbsp lemon juice, and ½ tsp chipotle powder together in a small bowl. Once the carrots are tender and the lentils have crisp patches, pull the pan out carefully and brush or drizzle the glaze over the carrots, tossing the lentils lightly so some pick up the seasoning. Return the pan to the 425°F (220°C) oven for 5–7 minutes, until the glaze looks glossy and lightly sticky at the edges. Keep an eye on it near the end so the maple does not scorch. | Why: A brief final roast caramelizes the glaze without burning its natural sugars.

  3. 03

    Mix the lemon-herb yogurt

While the pan finishes, finely chop 2 tbsp fresh parsley and mince 1 garlic clove. In a small bowl, stir them into ¾ cup plain Greek yogurt with the remaining ¼ tsp of the measured salt, until smooth. Taste and adjust the seasoning with a little more black pepper if desired. Set the sauce aside while the roasted vegetables stand for 2 minutes. | Why: Mixing the sauce during the final roast keeps the meal moving and gives the garlic a moment to mellow.

  4. 04

    Plate and serve

Spoon the lemon-herb yogurt onto a serving platter or divide it among four plates. Arrange the glazed carrots and crisp-edged lentils over the sauce, scraping any sticky pan juices over the top. Serve hot, while the lentils are still crisp and the yogurt is cool. | Why: Serving the hot roast over cool sauce preserves the contrast in temperature and texture.
