Crispy Lemon-Parmesan Chicken with Pesto-Pea Orzo

Ingredients

  • 2 l waters
  • 250 g orzo, dry
  • 150 g frozen peas, frozen
  • 0.75 tsp salt
  • 0.5 tsp black pepper, ground
  • 0.5 cup all-purpose flour
  • 1 egg
  • 1 cup panko breadcrumbs
  • 40 g parmesan cheeses, finely grated
  • 1 lemon
  • 2 garlics
  • 3 tbsp basil pestos
  • 3 tbsp olive oils
  • 15 g butters
  • 600 g chicken breast cutlets, about 4 evenly thin cutlets

  1. 01

    Set up and prepare the ingredients

    Set a large pot, colander, two wide shallow bowls, one small bowl, a large skillet, and a clean plate beside the stove. Put 2 l water in the pot, cover, and bring to a boil over high heat while you prepare everything else. Measure 250 g orzo and 150 g frozen peas into separate bowls; keep the peas frozen. Measure 0.75 tsp salt, setting aside 0.25 tsp for the pot and 0.5 tsp for the cutlets, and measure 0.5 tsp black pepper for the cutlets. Put 0.5 cup all-purpose flour in one shallow bowl. Crack 1 egg into the small bowl and beat with a fork. In the second shallow bowl, combine 1 cup panko breadcrumbs with 20 g of 40 g Parmesan cheese; grate and reserve the remaining 20 g separately. Wash and dry 1 lemon, finely zest it, then cut and juice it; keep the zest and juice separate. Peel and mince 2 cloves garlic. Measure 3 tbsp basil pesto, 3 tbsp olive oil, and 15 g butter separately; plan on 1 tbsp of the oil for the cooked pasta and 2 tbsp for frying. Last, pat 600 g chicken breast cutlets dry with paper towels on a separate board, season both sides with the reserved salt and pepper, and wash your hands and any surfaces that touched the raw cutlets. | Why: Having the ingredients measured and the breading station ready keeps the cooking orderly and helps the coating stick.

    Cook the orzo and peas

    When the pot reaches a vigorous boil, add the reserved 0.25 tsp of seasoning and the measured pasta. Stir immediately and boil uncovered for about 8–10 minutes, checking the package timing and stirring occasionally. Add the frozen vegetables for the final 2 minutes; both should be tender, with the pasta still slightly firm in the center. Scoop out 1 cup of cooking liquid, then drain in the colander. Return the drained mixture to the pot and toss with the reserved 1 tbsp of oil so it does not clump; set aside off the heat. | Why: Adding the vegetables at the end cooks them through without turning them mushy, while reserved cooking liquid helps bind the finishing sauce.

    Bread and pan-fry the chicken

    Heat the skillet over medium heat for 2 minutes. Coat each seasoned cutlet in the prepared flour, shaking off excess; dip into the beaten mixture and let excess drip away, then press into the crumb mixture on both sides. Add 1 tbsp of the reserved oil to the skillet and cook half the cutlets without crowding, about 3–4 minutes per side. When the coating is deep golden and the thickest part reaches 165°F (74°C) on an instant-read thermometer, transfer to the clean plate. Add the remaining 1 tbsp oil and cook the rest the same way. If the coating darkens too quickly, reduce the heat to medium-low. Let the cooked cutlets rest on the plate for at least 3 minutes; discard leftover raw-meat breading mixtures. | Why: Frying in batches keeps the coating crisp, and checking the center ensures the cutlets are safely cooked.

    Dress, season, and serve

    While the cutlets rest, wipe any burnt crumbs from the skillet, set it over medium-low heat, and melt the measured butter. Stir in the minced aromatics for 30–45 seconds, just until fragrant but not browned. Add the cooked pasta mixture, the measured pesto, the reserved grated cheese, and ¼ cup of the reserved cooking liquid. Toss gently for 1–2 minutes until glossy and hot, adding another splash of cooking liquid if dry. Turn off the heat; stir in the prepared zest and 1 tbsp of the prepared juice. Taste and, if desired, brighten with more of the remaining juice. Divide among four plates, top with the rested cutlets, and serve immediately. | Why: Gentle heat keeps the pesto fresh-tasting, and adding citrus off the heat gives the finished dish a bright lift.
