  • 240 g couscous, regular, not pearl
  • 1 tbsp butter
  • 0.5 cup heavy cream
  • 1 tbsp olive oil

    Set up and season the chicken

    Set out a large skillet, a lidded medium saucepan, tongs, a thermometer, and two cutting boards—one reserved for raw poultry. Pat 680 g chicken breast dry with paper towels; slice thick breasts horizontally into 4 roughly even cutlets, about 1.5 cm thick. On both sides, season with 0.75 tsp kosher salt and 0.25 tsp black pepper. Wash your hands and clean the raw-poultry board and knife before handling anything else. Drain and chop 1 artichoke heart; drain 2 tbsp capers. Peel and mince 2 garlic cloves. Wash and dry 1 lemon, then zest and juice it, keeping zest and juice separate. Wash, dry, and chop 0.25 cup parsley. Measure 1 cup chicken broth, 0.5 cup water, 240 g couscous, 1 tbsp butter, 0.5 cup heavy cream, and 1 tbsp olive oil into separate containers; keep the chicken on its own plate until cooking. | Why: Even cutlets cook at the same rate, while prepping the sauce ingredients first keeps the cooking quick and safe.
