  • 0.25 tsp black pepper
  • 2 tbsp tomato paste
  • 0.25 cup beef broth
  • 8 small flour tortillas
  • 1 cup sharp cheddar cheese, shredded
  • 1 tbsp neutral oil
  • 0.5 cup sour cream

    Heat the oven and prepare the aromatics

    Heat the oven to 425°F (220°C). Set a wire rack over a rimmed baking sheet, or line the sheet with parchment. Wash and dry the produce. Finely dice 1 yellow onion and mince 2 garlic cloves. Chop ¼ cup fresh cilantro leaves. Zest 1 lime, then juice it and set the juice aside for the crema. | Why: Preparing the tray and aromatics first makes cooking and assembly smooth.

    Fill and roll the taquitos

Stir 1 cup shredded sharp cheddar cheese into the warm beef mixture. Place about ¼ cup filling in a line across the lower third of each tortilla, roll tightly, and set seam-side down on the prepared baking sheet with a little space between each one. | Why: A brief cool-down and pliable tortillas help prevent torn wrappers and loose filling.
