  • 2.25 cup waters
  • 0.5 tsp fine salt
  • 1 english cucumber, thinly sliced
  • 3 tbsp rice vinegar
  • 1 tsp granulated sugar
  • 0.25 tsp fine salt
  • 0.33 cup mayonnaise
  • 1 tbsp fresh lime juice
  • 1 tsp toasted sesame oil
  • 1 tbsp water
  • 1.5 lb skinless salmon fillets, cut into 1-inch cubes
  • 1 tbsp neutral oil
  • 1 tbsp soy sauce
  • 1 tbsp sesame seed
  • 0.5 tsp garlic powder
  • 0.25 tsp ground black pepper

Instructions

    Cook the rice

    Rinse 1 1/2 cups jasmine rice in a fine-mesh sieve under cool water until it runs mostly clear. Combine it in a saucepan with 2 1/4 cups water and 1/2 tsp fine salt. Bring to a boil over medium-high heat, then cover, turn the heat to low, and simmer for 15 minutes, until the water is absorbed and the grains are tender. Remove from the heat and let stand, covered, for 10 minutes; fluff with a fork before serving. | Why: Rinsing removes surface starch for separate, fluffy grains.

    Quick-pickle the cucumber

    While the rice cooks, wash and dry 1 English cucumber, then slice it thinly. In a bowl, stir together 3 tbsp rice vinegar, 1 tsp granulated sugar, and 1/4 tsp fine salt until dissolved. Add the cucumber, toss well, and set aside for at least 15 minutes, tossing once or twice so the slices turn glossy and lightly tangy. | Why: A quick pickle adds crisp acidity to balance the rich salmon and sauce.

    Pat 1 1/2 lb skinless salmon fillet dry with paper towels and cut it into 1-inch cubes. In a bowl, toss the cubes with 1 tbsp neutral oil, 1 tbsp soy sauce, 1 tbsp sesame seeds, 1/2 tsp garlic powder, and 1/4 tsp ground black pepper until evenly coated.     Pan-sear the salmon

    Heat a large nonstick or well-seasoned skillet over medium-high heat for 2 minutes. Arrange the salmon in a single layer, working in batches if needed so the pieces are not crowded. Cook for about 3 minutes without moving, until the bottoms are browned, then turn and cook for 2–3 minutes more, turning occasionally, until all sides are golden and the thickest pieces reach 145°F (63°C) on an instant-read thermometer. Transfer to a clean plate. | Why: A hot pan creates crisp edges while the thermometer confirms the fish is safely cooked.

    Assemble and serve

    Divide the warm rice among four bowls. Top each with the seared salmon and drained quick-pickled cucumber.
