Ingredients

  • 1 onion, finely diced
  • 2 carrots, peeled and finely diced
  • 2 celery stalks, finely diced
  • 8 oz cremini mushrooms, sliced
  • 2 garlic cloves, minced
  • 2 tbsp olive oils
  • 1 tbsp unsalted butter
  • 1 tsp dried thyme
  • 0.5 tsp kosher salt
  • 0.25 tsp ground black pepper
  • 1 cup wild rice blend, uncooked and rinsed
  • 6 cup low-sodium vegetable broth
  • 1 tbsp fresh sage, finely chopped
  • 1 cup sharp cheddar cheese, grated
  • 4 sturdy sandwich bread slices
  • 0.5 cup heavy cream
  • 1 tbsp fresh lemon juice, freshly squeezed

Instructions

  1. 01

    Prepare the vegetables

Peel and finely dice 1 onion and 2 carrots. Rinse and dry 2 celery stalks, then finely dice them. Wipe 8 oz cremini mushrooms clean with a damp towel, trim the stems, and slice the caps and stems. Peel and mince 2 garlic cloves. Keep the mushrooms and garlic separate from the diced vegetables. | Why: Evenly sized pieces cook at a similar rate, and dry mushrooms brown instead of steaming.

  2. 02

    Soften the aromatic vegetables

Set a large heavy pot over medium heat for 1 minute. Add 2 tbsp olive oil, then the prepared onion, carrots, and celery. Cook, stirring occasionally, for 6–8 minutes, until the onion looks translucent and the vegetables begin to soften. | Why: A gentle start builds a sweet, savory base without scorching the vegetables.

  3. 03

Brown the mushrooms and season the pot

Add 1 tbsp unsalted butter and the prepared mushrooms. Cook over medium-high heat, stirring occasionally, for 7–9 minutes, until their released moisture evaporates and the edges turn golden brown. Stir in the prepared garlic, 1 tsp dried thyme, 1/2 tsp kosher salt, and 1/4 tsp ground black pepper; cook for 1 minute, until fragrant. | Why: Browning concentrates mushroom flavor; adding garlic last keeps it from burning.

  4. 04

    Simmer the wild rice soup

Rinse 1 cup wild rice blend in a fine-mesh strainer and drain thoroughly. Stir it into the pot, then pour in 6 cups low-sodium vegetable broth, scraping the browned bits from the bottom. Bring to a boil over high heat, about 4–6 minutes. Reduce heat to low, partially cover, and simmer gently for 40–45 minutes, stirring every 10 minutes, until the grains are tender but pleasantly chewy. If your blend's package calls for a longer cooking time, continue simmering until tender. | Why: A gentle simmer cooks the grains evenly and lets their starch lightly enrich the broth.

  5. 05

Heat the oven and arrange the toast

When the rice has about 15 minutes left, set the oven to 425°F (220°C) and line a baking sheet with parchment paper. Rinse and thoroughly dry 1 tbsp fresh sage, then finely chop it; grate 1 cup sharp cheddar cheese if needed. Arrange 4 sturdy sandwich bread slices on the lined sheet in a single layer. Once the oven reaches temperature, bake for 4 minutes, until the tops feel lightly dry and the edges just begin to color. | Why: Lining the sheet prevents sticking, and briefly drying the bread helps the finished toasts stay crisp.

  6. 06

    Melt the sage-cheddar topping

Carefully remove the baking sheet from the oven and turn the bread slices over. Divide the prepared cheddar and sage evenly among the four slices. Return the sheet to the 425°F (220°C) oven and bake for 5–7 minutes, until the cheese bubbles and the toast edges are golden. Let the toasts stand on the sheet for 2 minutes so the topping sets slightly. | Why: Flipping exposes the drier side to the topping, and a short rest keeps the melted cheese in place.

  7. 07

    Finish the soup and serve

When the rice is tender, turn off the heat and stir 1/2 cup heavy cream into the soup. Squeeze and measure 1 tbsp fresh lemon juice, discarding any seeds, and stir it in. Taste and adjust the seasoning if needed. Let the soup rest for 2 minutes, then ladle it into four bowls and serve each with a warm sage-cheddar toast. | Why: Cream rounds out the earthy flavors, while lemon brightens them just before serving.
