    Heat the oven and line the pan

    Set an oven rack in the center and heat the oven to 375°F (190°C). Line all 12 cups of a standard muffin pan with paper liners; set the lined pan aside. Set out two mixing bowls, a small bowl, a whisk, and a spoon. | Why: Lining the pan before mixing means the batter can go straight into the oven.

    Make the oat crumble

    In the small bowl, combine 40 g rolled oats, 40 g all-purpose flour, and 40 g light brown sugar. Cut 30 g cold unsalted butter into small cubes and rub it into the mixture with your fingertips until moist clumps form.     Place the filled pan on the center rack of the 375°F (190°C) oven.
