Set a large, deep skillet with a lid, a cutting board, a knife, a box grater, and measuring cups and spoons by the stove. Wash and dry 2 tbsp fresh dill, then chop it. Chop 0.5 cup dill pickle and 1 yellow onion; peel and mince 2 garlic cloves. Grate 170 g sharp cheddar cheese and refrigerate it until needed. Measure 1.25 cups orzo, 2 tbsp tomato paste, 1 tbsp olive oil, 0.75 tsp kosher salt, 0.25 tsp black pepper, 3 cups low-sodium beef broth, 0.5 cup whole milk, 1 tbsp yellow mustard, and 1 tbsp dill pickle brine. Keep 1 lb ground beef refrigerated until the skillet is ready. Stir in 1 tbsp yellow mustard, 1 tbsp dill pickle brine, and the remaining 0.25 tsp kosher salt. Fold in 0.5 cup dill pickle and 2 tbsp fresh dill. Let stand for 2 minutes to thicken slightly, then divide among 4 bowls and serve warm.
