Rinse the shreds under cold water, then squeeze very dry in the towel. 180 g broccoli florets: rinse, pat dry, and chop into small, roughly pea-size pieces. Soften the broccoli and mix the lemon cream
Put the chopped broccoli in the microwave-safe bowl, cover loosely, and microwave on high for 1 minute 30 seconds, until bright green and just tender; uncover carefully to release steam and let it cool. 120 g sour cream: spoon into a small bowl. 2 scallions: rinse, dry, trim, and thinly slice; stir most into the sour cream, reserving a pinch for serving. 1 tbsp lemon juice: stir into the cream until smooth.
