Cook and rest the rice
Rinse 1 cup long-grain white rice in a fine-mesh sieve under cool running water until the water runs mostly clear. Put it in a medium saucepan with 1¾ cups water and bring to a boil over high heat. Cover, turn the heat to low, and cook for 15 minutes, until the liquid is absorbed.
