Cheddar-Chive Chicken Biscuit Pot Pie

Ingredients

  • 1 yellow onion, peeled and diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, washed and diced
  • 2 garlic cloves, peeled and minced
  • 1 tsp fresh thyme, finely chopped
  • 2 tbsp fresh chives, washed, dried, and finely chopped
  • 1.25 lb boneless, skinless chicken thighs, patted dry and cut into ¾-inch pieces
  • 4 oz sharp cheddar cheese, grated
  • 2 tbsp olive oils
  • 0.75 tsp kosher salt
  • 0.25 tsp ground black pepper
  • 3 tbsp all-purpose flour
  • 2 cup low-sodium chicken broth
  • 0.5 cup whole milk
  • 1 cup frozen peas, kept frozen
  • 1 refrigerated biscuit dough tube, eight-biscuit tube, about 16 oz

    Heat the oven and prepare the ingredients

    Set a rack in the middle of the oven and heat to 400°F (205°C). Set a 10-inch oven-safe skillet, a cutting board, a knife, a grater, and measuring spoons within reach. Peel and dice 1 yellow onion and 2 carrots; wash, dry, and dice 2 celery stalks. Peel and mince 2 garlic cloves. Measure and finely chop 1 tsp fresh thyme; wash, dry, and finely chop 2 tbsp fresh chives, keeping them separate. Pat 1.25 lb boneless, skinless chicken thighs dry with paper towels, cut into ¾-inch pieces, then wash your hands and clean the knife and board before using them again. Grate 4 oz sharp cheddar cheese and set aside. | Why: Evenly cut vegetables cook together, and drying the chicken helps it brown.

    Brown the chicken and soften the vegetables

    Place the skillet over medium-high heat. Add 2 tbsp olive oil; when it shimmers, spread the prepared chicken in an even layer. Season with ¾ tsp kosher salt and ¼ tsp ground black pepper. Cook for 4 minutes, turning once, until lightly browned; it need not be cooked through. Transfer to a clean plate. Add the prepared onion, carrots, and celery to the skillet and cook over medium heat for 5–6 minutes, stirring occasionally, until the onion looks translucent and the carrots begin to soften. Stir in the prepared garlic and thyme for 30 seconds, until fragrant. | Why: Browning builds flavor, while softening the vegetables prevents a crunchy filling.

    Make the creamy cheddar filling

    Sprinkle 3 tbsp all-purpose flour over the vegetables and stir constantly for 1 minute, until no dry flour remains. Slowly pour in 2 cups low-sodium chicken broth, stirring and scraping up the browned bits, then stir in ½ cup whole milk. Return the chicken and any juices from its plate to the skillet. Simmer gently for 4–5 minutes, stirring often, until the sauce coats a spoon and the chicken pieces reach 165°F (74°C) at their centers. Stir in 1 cup frozen peas and the prepared cheddar until the cheese melts, about 1 minute. Taste and adjust the seasoning if needed. | Why: Cooking the flour removes its raw taste, and a gentle simmer thickens the sauce without scorching the cheese.

    Top with biscuits and bake

    Turn off the burner. Open 1 refrigerated biscuit dough tube (eight biscuits, about 16 oz) according to its package directions. Arrange the biscuits in a single layer over the hot filling, leaving small gaps for steam to escape. Wearing oven mitts, transfer the skillet to the heated oven. Bake at 400°F (205°C) for 18–22 minutes, until the biscuits are deep golden on top, no longer doughy at their centers, and the filling bubbles around the edges. If a biscuit browns before its center is done, loosely cover the skillet with foil and continue baking. | Why: Small gaps release steam so the biscuits bake fluffy rather than soggy.

    Rest, garnish, and serve

    With oven mitts, remove the skillet from the oven and set it on a heat-safe surface. Let stand for 5 minutes, until the bubbling filling settles slightly. Scatter the prepared chives over the biscuits and spoon the pot pie into four bowls; warn diners that the filling and skillet are hot. | Why: Resting makes the filling easier to serve, and chives add a fresh finish.
