Ingredients

  • 1 frozen puff pastry sheet, thawed according to package directions; still cool
  • 2 yellow onions, peeled and thinly sliced
  • 2 tbsp olive oils
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 1 tsp fresh thyme leaf, stripped from stems and chopped
  • 1 ripe pear, rinsed, dried, halved, cored, and thinly sliced
  • 2 tsp dijon mustards
  • 100 g vegetarian gruyère cheeses, grated
  • 1 egg, beaten
  • 1 tbsp water
  • 2 cup baby arugula, rinsed and dried
  • 1 tbsp lemon juice

    Set up the oven and pastry

    Heat the oven to 400°F (200°C) with a rack in the center. Line a rimmed baking sheet with parchment. Let 1 each frozen puff pastry sheet sit at room temperature for 10 minutes, just until pliable but still cool; unfold it on the lined sheet.
