Set a large stainless-steel or cast-iron skillet, tongs, a shallow bowl, a cutting board, and an instant-read thermometer beside the stove. Do not wash the poultry; pat 680 g boneless, skinless chicken breasts thoroughly dry with paper towels, then slice each horizontally into two thinner cutlets. Place them on the clean board and season both sides with 1 tsp kosher salt and 1/2 tsp freshly ground black pepper. Measure 60 g all-purpose flour into the shallow bowl and dredge each cutlet lightly, shaking off the excess. Wash and dry 300 g seedless red grapes, halve any very large ones, and set them aside. Peel and finely chop 1 medium shallot and 2 garlic cloves; strip and chop 2 fresh rosemary sprigs.
