  • 720 ml low-sodium chicken broth

  • 80 g feta cheeses, crumbled
  • 15 g fresh basils, torn

Instructions

  1. 01

    Prepare the pan and ingredients

Set a large, deep, oven-safe skillet or sauté pan, tongs, a chef’s knife, cutting board, measuring cups, and a fine grater on the counter. Pat the turkey dry with paper towels. Rinse the zucchini, spinach, basil, and lemon under cool running water; dry the greens and basil thoroughly. Drain the artichokes well and gently squeeze out excess moisture. Peel and finely chop the onion and garlic. Halve the zucchini lengthwise, then slice it into 1/2-inch pieces. Zest the lemon and cut it in half. Measure the orzo, broth, feta, salt, and pepper before heating the pan. Keep the turkey refrigerated until this step is complete, then season both sides with the salt and pepper. 600 g turkey cutlets, 2 each zucchini, 120 g baby spinach, 15 g fresh basil, 1 each lemon, 240 g canned artichoke hearts, 1 each yellow onion, 3 each garlic cloves, 240 g dry orzo, 720 ml low-sodium chicken broth, 80 g feta cheese, 1 tsp kosher salt, and 1/2 tsp black pepper | Why: Thorough drying improves browning, while measuring everything first keeps this fast skillet meal orderly.

  2. 02

    Sear the turkey

Heat the skillet over medium-high heat for 2 minutes. Add 1 tbsp olive oil, swirl to coat, and place in the seasoned turkey in a single layer. Cook for 3 minutes on the first side and 2 to 3 minutes on the second side, turning once, until deeply golden and the thickest piece reaches 165°F/74°C on an instant-read thermometer. Transfer the turkey to a clean plate and loosely cover it with foil; do not wash the skillet. | Why: A hot, lightly oiled pan creates a browned crust and leaves flavorful fond for the orzo.

  3. 03

    Build the vegetable base

Reduce the heat to medium. Add 1 tbsp olive oil, then add the chopped onion and zucchini. Cook for 5 minutes, stirring occasionally, until the onion is translucent and the zucchini edges begin to brown. Stir in the garlic and cook for 30 seconds, just until fragrant. Add the drained artichokes and cook for 1 minute, scraping up browned bits with a wooden spoon. | Why: Softening the vegetables before the grain goes in develops sweetness without making them mushy.

  4. 04

    Toast the orzo and simmer

Stir in 240 g dry orzo and toast for 2 minutes, stirring constantly, until the grains look lightly glossy and smell nutty. Pour in 720 ml low-sodium chicken broth and bring to a gentle boil. Reduce the heat to medium-low, cover, and simmer for 10 minutes, stirring once halfway through. The orzo is ready when it is tender but still slightly firm at the center and most of the liquid is absorbed; if it looks dry before it is tender, add 60 ml hot water and continue cooking for 2 minutes. | Why: Toasting adds depth, while a covered simmer cooks the orzo evenly in the savory broth.

  5. 05

    Finish, rest, and serve

Remove the lid and fold in 120 g baby spinach until wilted, about 1 minute. Return the turkey and any plate juices to the skillet, nestling the pieces into the orzo; cover and cook for 2 minutes, until the turkey is hot throughout. Turn off the heat. Squeeze in the juice from 1/2 lemon and stir in its zest, then taste and adjust only if needed with a small pinch of the reserved seasoning. Rest uncovered for 3 minutes. Scatter over 80 g feta cheese and 15 g fresh basil, then cut the turkey into strips if desired and serve hot from the skillet with the lemony orzo spooned underneath. | Why: Finishing greens, acid, feta, and herbs off the heat preserves their color and gives the rich skillet a fresh, balanced finish.
