Instructions
- 01
Prepare the oven, pan, and vegetables
Set a rack in the center of the oven and preheat it to 425°F (220°C). Line a large rimmed baking sheet with parchment. Rinse 4 bone-in, skin-on chicken thighs under cold water only if needed, then pat them very dry with paper towels; do not wash poultry routinely because splashing can spread bacteria. Scrub, peel if desired, and cut 450 g carrots into 1-inch diagonal pieces. Drain and rinse 400 g canned chickpeas, then shake them dry in a clean towel. Arrange the carrots and chickpeas on the lined sheet, leaving space for the chicken. Measure the seasoning and sauce ingredients for the next steps so cooking can proceed without delay. | Why: A hot oven and dry surfaces promote browning, while drying the chickpeas prevents them from steaming.
- 02
Season and arrange
Drizzle 2 tbsp olive oil over the vegetables and toss to coat. Rub the chicken skin and flesh with 1 tbsp olive oil, then season all sides with 2 tbsp za’atar, 1 tsp ground cumin, 1 tsp smoked paprika, 1 tsp kosher salt, and ½ tsp black pepper. Nestle the thighs skin-side up among the vegetables, keeping the skin exposed rather than buried. Roast immediately. | Why: Layering the aromatic seasoning under and over the chicken builds flavor, while exposed skin can render and crisp.
- 03
Roast until crisp and tender
Roast for 25 minutes, then carefully remove the sheet and turn the carrots and chickpeas with a spatula, leaving the chicken skin-side up. Return the pan to the oven for 10–15 minutes, until the skin is deeply golden and crisp, the carrots are fork-tender with browned edges, and the thickest part of the chicken reaches 165°F (74°C) on an instant-read thermometer without touching bone. If the skin needs more color after the chicken is safe, broil for 1–2 minutes while watching continuously. Transfer the chicken to a plate and let it rest for 5 minutes; leave the vegetables on the warm sheet. | Why: Turning the vegetables evens their browning, and resting lets the juices redistribute before serving.
- 04
Mix the cool finishing sauce
While the pan roasts, zest and juice 1 lemon. Finely mince 1 garlic clove. In a small bowl, stir 180 g plain Greek yogurt, the lemon zest and 1 tbsp lemon juice, the garlic, and ¼ tsp kosher salt until smooth. Taste and add the remaining lemon juice if you want it sharper. Chop 15 g fresh parsley. Keep the sauce chilled until the chicken has finished resting. | Why: Cooling the sauce contrasts with the hot roast, while lemon and garlic cut through the rich skin.
- 05
Finish and serve
Spoon the warm roasted vegetables onto four plates. Set one rested chicken thigh on each plate, drizzle with the yogurt sauce, and scatter the chopped parsley over the top. Serve immediately while the skin is crisp and the vegetables are hot. | Why: Serving the components together gives every bite a balance of crisp, creamy, sweet, savory, and fresh flavors.
