Set a large skillet, a plate, tongs, a meat mallet or rolling pin, a fine grater, measuring tools, and an instant-read thermometer within reach. Pat 600 g boneless skinless chicken breast dry; do not rinse it. Slice horizontally into 4 thin cutlets, place them between sheets of parchment, and gently pound to an even 1/2-inch thickness. On a shallow plate, combine 60 g all-purpose flour, 1 tsp kosher salt, and 1/2 tsp black pepper. Coat the cutlets in the seasoned flour, gently shake off the excess, and place them on the clean plate. Simmer gently for 3 to 5 minutes, turning the cutlets once, until the peas are hot, the orzo is tender and saucy, and the thickest part of each cutlet reaches 74°C / 165°F. Remove the skillet from the heat, scatter over the prepared parsley, and rest for 3 minutes. Taste the orzo and add a small pinch more salt or pepper only if needed.
