Heat the oven and start the potatoes
Place an oven rack in the center position and heat the oven to 425°F. Line a rimmed baking sheet with parchment paper. Scrub, rinse, and thoroughly dry 1 1/2 lb baby Yukon Gold potatoes; halve any larger pieces so they are all about 1 inch wide. Toss them on the lined sheet with 1 tbsp olive oil, 3/4 tsp kosher salt, and 1/2 tsp black pepper. Roast until the center reaches 145°F on an instant-read thermometer, 10–14 minutes. Move the pork to a clean cutting board and rest it, loosely tented with foil, for 8 minutes. While the pork rests, shuck 3 each fresh corn ear, remove the silk, rinse the ears, and dry them. Peel and mince 2 each garlic clove. Finely chop 2 tbsp fresh chive.
