Golden, paprika-seasoned turkey cutlets share a skillet with sweet corn and tender zucchini in a light, creamy pan sauce. A squeeze of lemon and fresh parsley keep the comforting dish bright, while a quick flour dredge gives the cutlets a satisfying crisp edge without deep-frying.

Set up and prep the ingredients
Place a large skillet, a meat mallet, three shallow bowls, a cutting board, a chef’s knife, a whisk, and a clean plate near the work area. Wash and thoroughly dry 1 medium zucchini and 1 lemon. Trim the zucchini ends and cut it into 1/2-inch half-moons. Finely chop 30 g fresh parsley. If the cutlets are thicker than 1/2 inch, place them between sheets of parchment and gently pound them to an even 1/2-inch thickness. Pat 600 g turkey breast cutlets dry with paper towels. Measure 60 g all-purpose flour, 1 tsp smoked paprika, 1 tsp garlic powder, 3/4 tsp kosher salt, and 1/2 tsp black pepper into one shallow bowl; whisk to combine. Beat 1 large egg in a second shallow bowl. Put 90 g panko breadcrumbs in a third bowl. Drain 240 g canned corn well. Keep the prepared ingredients separate and wash your hands and the cutting board after handling the raw poultry. | Why: Even cutlets cook at the same rate, and organized dredging prevents cross-contamination and last-minute rushing.
- 02
Coat the turkey
Season the dry cutlets by turning each through the prepared spice mixture, pressing lightly so the surface is covered. Dip each one into 1 beaten egg, letting excess drip back into the bowl, then press both sides into 90 g panko breadcrumbs until evenly coated. Set the coated pieces on the clean plate without stacking them. Let them stand for 5 minutes so the coating hydrates and adheres. | Why: Resting the coating helps it stay attached during cooking and creates a more even crisp crust.
- 03
Brown the cutlets
Heat the large skillet over medium-high heat for 2 minutes. Add 30 ml olive oil and swirl until it shimmers. Carefully lay in the coated cutlets in a single layer, working in batches if necessary. Cook for 3–4 minutes on the first side, without moving them, until deeply golden. Turn and cook for 2–3 minutes more, until the crust is crisp and the thickest part reaches 74°C on an instant-read thermometer. Transfer to the clean plate and tent loosely with foil. Reduce the heat to medium. | Why: A hot, lightly oiled pan sets the crust quickly, while the temperature check confirms safe doneness without overcooking.
- 04
Cook the vegetables
Add 1 medium zucchini, 240 g drained canned corn, and 1/4 tsp kosher salt to the same skillet. Cook over medium heat for 5–6 minutes, stirring every minute, until the zucchini is tender-crisp with browned edges and the corn is hot. Stir in 1 minced garlic clove and cook for 30 seconds, just until fragrant and no longer raw. | Why: Cooking the vegetables in the browned pan juices builds flavor while keeping their texture lively.
- 05
Make the lemon cream sauce
Whisk 120 ml low-sodium chicken broth, 120 ml heavy cream, and 1 tsp lemon zest in a measuring jug. Pour the mixture into the skillet and scrape up any browned bits with a wooden spoon. Simmer over medium-low heat for 3–4 minutes, stirring often, until slightly thickened and glossy. Turn off the heat and stir in 2 tsp lemon juice and 15 g unsalted butter until smooth. Taste and add 1/4 tsp kosher salt only if needed; the sauce should be savory, creamy, and gently tangy. | Why: The broth loosens the flavorful fond, while gentle simmering reduces the sauce without making the dairy split.
- 06
Finish, garnish, and serve
Nestle the rested cutlets into the warm sauce and vegetables, spooning sauce over the top without submerging the crisp crust. Warm for 1 minute, then remove the skillet from the heat. Scatter 30 g chopped fresh parsley over everything. Rest for 2 minutes so the sauce settles, then serve one cutlet per plate with the vegetables and sauce alongside. Finish each serving with a little more of the reserved 1 lemon, cut into wedges, if desired. | Why: A brief finish warms the poultry without softening the crust too much, and fresh herbs and citrus sharpen the rich sauce.
